Millet Flour is made from millet seed, a small, round, yellow grain-like seed with a mildly sweet, corn-like flavour. When milled into flour, it looks similar to yellow corn flour, and adds a slightly sweet flavour -  You can often cut sugar in recipes when you use it.

A little millet flour in bread makes it lighter with a crunchy crust, which many people find delicious.
