  • The great thing about lentils is they don’t require pre-soaking before you cook them but soaking them will reduce their phytate content.
  • Rinse lentils before cooking. Put 1 cup of lentils into 4 cups of boiling water. Cover and simmer for 20-25 minutes until tender. Add seasoning as desired.
  • Include in hearty and warming soups, stews and curries
