Black Cumin is one of the most revered seeds around and in fact is the most commonly used spice in the world after black pepper. Though popular as a spice in Indian and Middle Eastern cuisine, their nutty, peppery flavour can be used to add flavour and goodness to just about anything. Try sprinkled in salads, stir-fries, or veggies. They can even be mixed into a tonic with honey and garlic.

- Cumin works really well in curries, chutneys, sauces & soups. It is often found in lamb dishes in the Middle East, and is well suited to vegetables, as well as in falafel and is also lovely in rice salads - adding texture and crunch.
- Add at the beginning of cooking with the oil and let it heat up gently to release its flavour and goodness.
- Cumin also makes delicious salad dressing. Try it with tahini, garlic and salt with water to blend!
- Use sparingly, because it easily takes over other flavours. Roughly, around 5 grams (or 1 teaspoon) is sufficient in a dish for four people.
