To ‘activate,’ or sprout, these pumpkin seeds, they have been gently soaked in filtered water, which improves their bio-availability and digestibility. After releasing the nuts’ enzyme inhibitors, the activated pumpkin seeds are rinsed and dehydrated below 45 degrees. This process enhances the flavour and adds an extra crunch.
