A Middle East staple, chickpeas are traditionally used to make hummus and are great in curries and falafel.   • 1 cup of dried chickpeas yields about 4 cups of cooked chickpeas. When the chickpeas are cooked, turn the stove off, keep the pot covered, and allow the chickpeas to completely cool in the leftover broth. This last soak adds flavor and promotes a creamy texture.
  • We love making our own hummus and experimenting with different herbs and spices.
