How Interesting...

Coconut milk that doesn't separate, requires a whole load of additives to keep it looking this way. So you see this separation is a good thing, all you need to do is mix it back together... Simply give the can a good shake or stir. No emulsifiers necessary!

Storage

This product may separate (i.e. the cream and the milk) and possibly solidify in cool temperatures but will melt when warmed. This has no effect on flavour or quality. Once opened, put unused product in a non-metallic container and refrigerate. Use within two days.
