Normally soba noodles are made from 40-80 percent buckwheat flour with the remainder being unbleached white flour. However, these Spiral, Certified Organic Soba noodles are from water and buckwheat flour.  They are a salt-free, hearty, delicious, gluten-free noodle.

Soba, Japanese buckwheat noodles are the traditional Japanese fast food, developed centuries ago as the perfect instant meal.

  • Don't overcook them. They need only about four to five minutes in the water to reach a desired al dente texture. After cooking rinse well in cold water to remove excess starch than can cause the noodles to clump together. I find this easiest to do in a colander.
