Rye is now a very popular baking grain, especially in Eastern Europe and Scandinavia, where various types of rye flour are used in a range of applications. While not gluten free, it is lower in gluten than wheat.   

Many people prefer rye to wheat because its DNA has not been changed by farming methods and it has a more extensive nutritional profile.  Rye grain has a deeper, stronger taste than milder tasting wheat.
