Small, dried, reddish brown beans, with a white ridge along one side. Adzuki beans have a nutty flavour, and are commonly used in Japanese dishes. An Adzuki bean, when boiled down to sugar makes a sweet paste known as anko and is used as fillings in cakes and sweet meats.

Easy to digest, they cook faster than other beans. Packed with nutrients they support kidney and bladder function, detoxify the body, reduce swelling, and cleanse the blood.  Full of fibre, Adzuki beans promote regular bowel movements, are a good source of energy and help lower cholesterol.  Once they are cooked they give a sweet, nuttty flavour and offer the lowest amount of fat and highest protein per bean than any other. 

To cook the dried bean, soak ½ cup overnight in ample water. Drain and add 2 cups water and cook for 40 minutes to an hour.  Great in soups or salads. Mix with rice or quinoa.
